So we have had a glorious weekend here in the Northwest; the early glimpse of summer sunshine and soaring temperatures called for a bbq on the patio this evening for dinner, and it was amazing to be outside again after a long, dark, and rainy winter. To celebrate, I pulled out one of my favorite summer drink recipes: limonata. It is so incredibly simple yet effective. Just fresh squeezed lemon juice, simple syrup, sparkling water, and some rosemary for garnish and taste.
Limonata Recipe: (makes 4 drinks)
– 1/2 cup fresh squeezed lemon juice
– 1/2 cup simple syrup (equal parts water and sugar, brought to a quick boil and then chilled)
– 700ml club soda or other sparkling water (approx. 2 cans)
– 4 sprigs of rosemary
Fill four glasses with ice and add two tablespoons each of the lemon juice and simple syrup; top with sparkling water, and garnish with the rosemary. Of course, the amount of lemon juice and simple syrup can be adjusted to taste, but I find this is a great ratio.
If I am only serving a few people, I like to keep the simple syrup and lemon juice in vintage glass bottles or something similar, and pour the drinks at the table. The ingredients tend to layer and look great before they are stirred up.
